    ~Some personal recipes to share~

    Here are some recipes of some regular things I make -for anyone looking for that something a bit different. I am on a wheat free low fat diet as im intolerant (not allergic) to wheat This just means wheat doesnt suit my stomach and i feel better without it. I prefer lower in fat as i feel its more healthy, this doesnt include oily fish which is in the omega 3 (good fat) family and is very good for you !

         Sweet Oat Cakes  (no added sugar, low in fat) 

    • 4 oz rolled oats
    • 2 apples
    • 3oz chopped dates
    • 1tsp vanilla essence
    • 1 generous tablespoon of honey
    • (add nuts in if you want-brazil,chopped almonds etc)
    • 2oz Dried apricots
    • 30gms glace cherries (optional)
    • 1 oz sultanas
    • 2oz coconut
    • add more of the ones u really like and less of the ones you don't

    Mix together and if it seems a bit dry add an egg white or a bit more honey. Put in a suitable container  and cook on 190 for about 20 mins.

    This is a good alternative to cake and u can add what ever u like in really, i use all kind of stuff that i have at the time including  pears, n pineapple

     

     

    This is my special recipe ! better than a takeaway one !so my hubby says lol.  

         Chicken curry wheat free     (low in fat)

    • 550 ml water
    • 250 ml milk
    • handful of sultanas
    • 5 tablespoons plain yoghurt
    • 1 tablespoon tomato sauce
    • 5 tablespoons of curry paste ,,, Sharwoods rogan josh curry paste, medium gluten free , no artificial colours flavours or preservatives. (waitrose sell it)
    • 1 carrot chopped up
    • 1 onion
    • Thickening  granules , mcdougles is  gluten free
    • extra virgin olive oil for frying .
    • 2 medium portions of chicken breast

     

    Method

    Chop onion, carrot,chicken, apple up and put some extra virgin olive oil in a frying pan and fry for about 15 minutes.

    In a pan put the water, milk,tomato sauce, curry paste, sultanas and yoghurt bring to the boil and simmer.

    Add all together and simmer for about 1 1/2 hours.

    Thicken with thickening granules

    I've been making this for about 15 yrs and pefected it over that time, My hubby prefers this one to the takeaways and its lower in fat ! We have it most weeks as we love it soooo                                          

    Oat cheese bake (vegetarian)

    • 4 oz cheddar cheese (use low fat if u want too)
    • 2 large carrots
    • 1 small onion
    • half/one green pepper  ( i like one but some ppl use half)
    • 1 onion
    • 2 oz marg or butter
    • 5 oz rolled oats
    • 1 large egg
    • I put in tomatoes even though its not on the recipe i was given.

    Method

    Grate the carrot and cheese , cut up the green pepper. In a sauce pan melt the butter and beat and add the egg. Mix all the ingredients together in a bowl  and put in a suitable dish to cook.

    cook at  190deg in the middle of the oven for about 20 mins

    My mum gave me this recipe and she made a sample one and i changed it a bit to suit what i liked. I tend to use it as an alternative to pizza and i prefer it to pizza ! I'm thinking of doing a meat vers                      

     

     Blackberry crumble

    4/5 cups of blackberries

    1tablespoon honey

    1oz demerara or brown sugar

     

    Topping

    1/4 cup of self raising flower

    2 tablespoons margarine

    2 tablespoons dessicated coconut

    2 tablespoons porridge oats

    2 tablespoons demerara or brown sugar

     

    Method

    put the blackberries in a saucepan with 1oz of demerara sugar and 1 tablespoon of honey. simmer for about 20 mins and thicken with some flour and put in a bread/sponge tin.

    mix all the dry ingredients then add the margarine and mix until it all looks like bread crumbs. Spread on top of the blackberry mixture and put in a medium hot oven for about 20 minutes.
